Image credit: Homes4Media_United_Kingdom PAN FRIED SALMON WITH TOMATO AND CHILLI Proving that quick cooking doesn’t need to be boring is this delicious salmon dish which provides lots of taste in just 10 minutes. The pan-fried salmon is fl avoured with cherry tomatoes and a warming hit of chilli, perfect when served with giant couscous and green vegetables such as tender steamed broccoli or wilted spinach leaves. Serves: 2 Ingredients: • 2 tsp coconut oil • 2 salmon fi llets (skin on) • 2 cloves garlic, crushed • ½ small red chilli, deseeded and chopped fi nely • 100g cherry tomatoes, halved • Handful coriander leaves, chopped Method: 1. Heat the coconut oil in the Pyrex Gusto 24cm pan. Once hot, fry the salmon fi llets skin side down for 2-3 minutes until the skin is golden brown. 2. Turn the salmon over then add the chilli, garlic and tomatoes to the pan and cook for a further 2-3 minutes. Add the coriander leaves and serve with giant couscous and vegetables. GINGER AND CHOCOLATE POTS A deliciously rich dessert designed for a romantic night in for two this Valentine’s Day. Serves: 2 Ingredients: • 100g plain chocolate • 20g butter, melted • 50g gingernut biscuits, crushed fi nely • 3 Tsp diced stem ginger drained of syrup • 100ml double cream Method: 1. Mix most of the biscuits with the melted butter (reserving 2 teaspoons for decoration) and divide between the Pyrex ramekins, press well down to form a biscuit base. 2. Melt the chocolate with the cream in a bowl over a pan of barely simmering water. Remove from the heat and stir well together with 2 Tsp of the ginger. Pour over the biscuits and refrigerate for 1-2 hours until set. Remove from the fridge 10 minutes before serving. 3. Sprinkle with the reserved biscuit crumbs and top with a little stem ginger and serve. All recipes courtesy of www.pyrexuk.com 
